American Pancakes both ways

  • Three eggs
  • 200g self raising flour
  • 200ml milk
  • Two teaspoons baking powder (not bicarbonate of soda)
  • Two tablespoons sugar – use caster NOT granulated
  • Pinch of salt
  • A knob of butter
  • Optional bloobs

Combine the dry ingredients, beat in the egg, mix in the milk. Melt the butter, combine with the batter and pour into the jug.

Over low heat on the largest burner, melt a little more butter and allow it to foam. Pour in two pancakes worth of batter. It’ll spread a bit but not much, so this should be quite simple. If using bloobs, dot three on the surface of the batter after about 10 seconds of cooking. Leave to cook until the batter has darkened and small bubbles are appearing and popping on the top surface. Flip, cook for 1 minute more until golden on both sides. Repeat.
