• Four slices burger cheese
  • Half a block of feta
  • A handful of pre-grated low moisture mozzarella
  • Milk
  • Two tbsp butter
  • Two tbsp flour
  • Salt
  • Hot sauce

In a large pan with sides, heat the butter until foaming. Add the flour and stir together. Gradually add the milk, stirring all the while, until smooth and thinner than you’d like the sauce to be. Add the cheeses bit by bit – the burger cheese will emulsify everything together so don’t skip it – melting each addition before adding the next. Season with salt and hot sauce until you’re happy and keep warm. Stir again before serving.
